Congratulations on setting the date and getting out! It seems youa re good financial shape to make the transition. Think about paying off the car, as long as you don't deplete all your cash. The mortgage has at least some deductibility, and is probably a reasonable low rate. So that may be OK to keep paying on monthly basis.
 
With Fidelity, stick with the Spartan index funds and you'll be good. They are very cheap to own and are intended to compete with Vanguard. Otherwise, Fidelity has some expensive funds.
