Best ways to rip DVDs to hard drive

I'm trying to rip my DVDs (movies, TV shows, and homemade DVDs) onto my hard drive. What is the best software package and video format to use? (A format that will be recognizable by most media players). I know the "standard" for music seems to be mp3's. I have been using DVD Decrypter and/or DVD Shrink and I noticed that that format (VIDEO_TS) will not work on Windows Media Player, for example. At least it would not play on my computer.
Another related question: for the DVDs I've already backed up with DVD decrypter, can I use a file converter to convert to a more universally accepted format OR would it be better to rip them again directly into another format?
