I agree, CFB! Franks makes a lime flavor that I especially like. And it is widely available here in Canadistan.

We lived in Louisiana for some time. Tobasco is for the tourists. Way too hot for me without enough flavor. Cajun Chef is usually on the table in restaurants--a milder, more tasty sauce. After we moved away, I used to buy a dozen small bottles when passing through Houston on business.

Houston has a burger joint named Cajun Charlies'. We used to buy their house sauce at the restaurant. Later, I learned that they were using re-branded Cajun Chef.

Like Cholula brand, too. Hotter than Franks, but I like the flavor. It is nice to have a selection in the fridge.

Now, I am up here in Cowtown, Alberta, trying to figure out what Cajun food I can safely offer Muslim guests. I am down to shrimp ettoufe and bread pudding with some kind of godawful substitute for whiskey sauce. Blah.

I think so. "Fruits of the sea" seems to mean things that swim. I don't know if backbones are required. I am not gambling on oysters.

I may have to back down to red beans n rice.

I have tried to find spicy chicken or beef or lamb or buffalo sausage. Nothing like andouille or boudin. Nothin' even close like dem Cajun links.
