Breakfast: EggBeaters omelette with tomatoes, diced ham, mushrooms, sharp cheddar cheese & sliced jalapenos. Coffee with creamer, 1 tsp Splenda & 1/2 tsp cinnamon.

Lunch: Beef Fajitas (4 oz. meet) including grilled onions & green bell peppers, refried beans & mexican rice. Tortilla chips & salsa, 1 Corona beer w/lime. I did not eat the tortillas that came with the fajitas, if that's any consolation...

Afternoon snack: Carb Smart chocolate ice cream with crushed walnuts on top.

I'll probably have another cup of coffee this evening, but don't expect to eat any dinner..lol

I am just finishing up my dinner prep. I cooked some pork shoulder cubes in my pressure cooker, and then I am making a curry with them and finely chopped carrot and onion and celery and garlic and green pepper slices, suitably spiced and sautéed with the pork.

When I want to pressure cook cubes or chunks I put them in a stainless vegetable steaming basket in the cooker, with just enough water to come slightly above the bottom of the basket. I am also going to look for a trivet and Pyrex or other heat resistant container so I can make the entire curry in the pressure cooker, still off the bottom so it can stay concentrated. Once it comes up to operating pressure, I cut the heat way back to where I lose very little steam so that I will not run low on water.

I have had the T-Fal stainless pressure cooker over 25 years, and it is still going strong. I lube the gasket with coconut oil so I do not get any leakage. After my FW went back to graduate school and I was cooking for my children, I made many excellent one dish dinners with this setup.

This is going to be a good food day. Got up and started the bottom layer and top layer of a cheesecake. (blueberry) Then sliced potatoes and onions in a frypan with butter, olive oil and spices for home fries. Put the cheese cake base in the fridge to harden and the buleberry mixture to cool. Got the cream sugar ect together to make the centre layer and my home fries were done. Fried three eggs in butter, melted cheese over the home fries and that was breakfast. Midday I will finish the cheesecake and have a couple of slices of toast with home made black current jam. Yea I made the jam mostly because I could not find any store bought that I considered edible. My cousins birthday was Friday and the cheesecake is for her birthday. Her hubby is making a roast with trimmings. My cousin has had a hard week with the death of a friend and loves my cheesecake.

I was going through my kitchen pantry checking expiration dates and found a single box of Kraft Macaroni and Cheese way in the back. I haven't had M&C out of a box in a long time. The date stamp on the box showed 2 months until expiration, so I cooked it up for lunch.
M&C was a staple food for me when I was a starving college student. It still tasted really good.
I will not buy any more, though. The salt content was off the scale.

We found a frozen roast from about 10 months ago while spelunking the inner recesses of the freezer. That's a bit long for a roast, but there's always an answer.

Pot roast! Seasoned the roast up with garlic, pepper, thyme, and the secret ingredient... Red taters, carrots, onion, a yellow bell pepper. A bit of browning, then into the pot, with a pint of Guinness for liquid and a bit of flavor.

That'll do...

Shredded Wheat, skim milk and a banana for breakfast. I went to lunch at a restaurant as I invited a retired friend out to celebrate her birthday. I had a large chopped salad with grilled chicken and balsamic vinaigrette dressing and a glass of Pinot Noir. Dinner is yet to be determined...maybe more Shredded Wheat or possibly a cheese omelet. Or fresh blueberries on top of Greek culture yogurt.
My retired friend looks great, better than when she was w*rking. Relaxed, slimmed down. She goes to water exercise classes, plays bridge 3 times a week, travels. Her job was more of a pressure cooker compared to mine.

Conjecturing about the significance of this posting, I asked my wife (whose maiden name is Flynn) quite innocently whether March 17 was St. Patrick's Day, and she said Yes, and Why do you ask? Had some comfort food this morning. Made a large cast iron skillet of homemade biscuits, sausage, eggs and thick milk gravy. Mmmmm...

Omelet for breakfast, shrimp salad for lunch, and for dinner about a pound of pulled pork and collards deribbed and cut into strips and sautéed with bacon and onion.

Then a few pork rinds and a diet pop before bed, which is coming right about now.

The leftovers of the Mac & Cheese from yesterday.

We have leftover greens and beans and hot Italian sausage on deck for dinner. Mr B goes heavy on the garlic when he makes that dish for me.

Only fish, chicken and fresh veggies touch my lips at home cause I am determined to lose weight and be healthier. It's when I go out and eat that all h@ll breaks lose...sigh. And I have alot of social/educational groups I belong to, so I am now avoiding those that eat out so much as I can.

However, today so far (it's 4:30 pm now) I've had coffee with heavy whipping cream (my one indulgence); one piece of stir fry chicken with red and yellow cut-up bell peppers and a splash of sodium free Kikomann and one sour blueberry Rancher hard candy (I'm not perfect, OK?).
I'm going to have to eat something for dinner that holds me like eggs with cheese in them as I have a meeting tonight at 7 pm until 10 pm. Then Activia when I come home and something else like dried cherries. Depends on my mood.

For supper we had filet mignon wrapped with BACON, mushrooms sautéed in butter and garlic along with an assortment of veggies. Punkin' pie for dessert.

Breakfast: Whataburger Honey Butter Chicken Biscuit & coffee
Lunch: Turkey burger (cooked at home) & water
Dinner: Thinking about making an omelette with Eggbeaters, ham,turkey, tomatoes, cheese & maybe some jalapenos.

I think I drank maybe 3 cups of coffee today. No snacks. I've lost 4 lbs.
