Southern Utah?

Anyone familiar with southern Utah? My wife is returning to the north rim of the Grand Canyon for a 40th reunion of people who worked there. So we are going on a southern Utah road trip. She hasn't been there since then. Lots of old paths to cover but I would guess a lot of more recent developments to discover. So what is not miss stuff in the Kanab, Bryce, Zion & North Rim area, especially more recent developments than the geologic formations? Where to stay, where to eat?

Unfortunately no. we have a good Jeep and Moabis famous for off roading but that, and Capital Reef Park, are a bit further than we planned to get.

At Bryce there is decent on site hotel run by parks service - food options are not stellar...

We have stayed a couple of times at the Zion Mountain Resort, a few hours north of the North Rim on Hwy 89 on the way into Zion National Park. They have reasonably priced modern cabins, a very casual restaurant with great buffalo burgers, an evening campfire, all in a quiet and peaceful setting.
