DW prepares roasted root vegetables. Carrots, turnips, parsnips, sweet potatoes, onions. EVOO and seasoning. Delicious all year ‘round but especially good when it’s chilly outside.

I love it all! Try to have 5 colors (cauliflower, broccoli, asparagus, carrots, peppers, crimean mushrooms, Japanese eggplant for purple) but mushrooms & eggplant are hardest. Must be done on a separate pan bc they throw off a lot of water

Sounds yummy! Recipe, please?

I thought peanut butter was the healthy substitute for bologna and American cheese sandwiches!

Peanut butter is healthy! Just get one that's made with nothing but peanuts and salt. Avoid brands with added oils, sugar, etc.

I get fruits and veggies from the family garden and orchard. No refrigeration involved.

Got it. I do roast eggplant sometimes, but only on the BBQ grill outside, but I guess I could roast them in the indoor oven too. Thanks!

Nice! It's been years since I had parsnips, but I should try them again.

After checking out the ingredients, I think you're on to something. Delicious and probably won't kill you.

Love Mediterranean vegetables.

Love seafood and never eat it fried.

Fresh berries and many other fresh fruits.

Nuts.

Olive oil and olives.

Avocados.

We do, too. But we have to freeze some to extend our harvest.

Some of the fruit gets fermented, though.

Our grocery store has a variety of nuts. Pick your favorite, cashews, almonds, peanuts, walnuts and salt free almonds and peanuts...all lined up next to each other in dispensable containers. You can mix and match and put them in a grinder. There you have 100% butter of any kind of nut. No sugar, salt (if chosen) or additives.

My PCP that I meet regarding my annual physical always preaches the cheap superfood that is proven to lower cholesterol . Oatmeal. I have a cup of oatmeal daily for the last 10 years. It works.

Great idea. Do add some sort of liquid (or anything else), to make it silky(?)?

Thankfully, I think the answer is no. When my wife and I gave up sugar, flour and junk food many years ago, we realized food cravings went away. We have found that while we thoroughly enjoy whole unprocessed food, we no longer find it hard to stop eating a particular food. Our relationship with food has completely changed. I think the wrong foods promote over consumption and the right foods discourage it.

Besides gorging on salad, I also eat a lot of vegetable soup, particularly when the weather is cool: onion, celery, carrot, cabbage, zucchini, yellow squash, tomato, with little or no potato.

I often use little or no meat, but it's not a vegetarian stock as I use chicken or beef stock. Same as with salad, the only problem with this soup is that I can eat 2 quarts of it in one sitting, and still not feel satiated because it's so low calorie.
