From Burn After Reading, not a classic but I found it funny. I think you have to work for the G to find it funny:

CIA Superior: What did we learn, Palmer?
CIA Officer: I don't know, sir.
CIA Superior: I don't f***in' know either. I guess we learned not to do it again.
CIA Officer: Yes, sir.
CIA Superior: I'm f***ed if I know what we did.
CIA Officer: Yes, sir, it's, uh, hard to say
CIA Superior: Jesus F***ing Christ.

From Titanic...

Jack: Rose, you're no picnic, all right? You're a spoiled little brat, even, but under that, you're the most amazingly, astounding, wonderful girl, woman that I've ever known...
Rose: Jack, I...
Jack: No, let me try and get this out. You're ama- I'm not an idiot, I know how the world works. I've got ten bucks in my pocket, I have no-nothing to offer you and I know that. I understand. But I'm too involved now. You jump, I jump remember? I can't turn away without knowing you'll be all right... That's all I want.
Rose: Well, I'm fine... I'll be fine... really.
Jack: Really? I don't think so. They've got you trapped, Rose. And you're gonna die if you don't break free. Maybe not right away because you're strong but... sooner or later that fire that I love about you, Rose... that fire's gonna burn out...
Rose: It's not up to you to save me, Jack.
Jack: You're right... only you can do that.

My all-tme favorite is from "Star Trek IV":

Dr Gillian Taylor: Don't tell me...you're from outer space.
Cpt. Kirk: No, I'm from Iowa. I only work in outer space.

There must be a youtube of this somewhere, but I didn't have time to look for it.

Heat:

Detective Vincent Hanna: "So, you want to tell me what you know?"

Richard: "I get killed for telling you this sh*t!"

Hanna: "You get killed walking your doggie."

Jeremiah Johnson: Would you happen to know what month of the year it is?
Bear Claw Chris Lapp: No pilgrim, I wouldn't. I'm sorry.
Jeremiah Johnson: March? April maybe?
Bear Claw Chris Lapp: March? Maybe. I don't think April.
Bear Claw Chris Lapp: You've come far pilgrim.
Jeremiah Johnson: Feels like far.
Bear Claw Chris Lapp: Were it worth the trouble?
Jeremiah Johnson: What trouble?

Casablanca has several great conversations, but my favorite is:

Captain Renault: I've often speculated on why you don't return to America. Did you abscond with the church funds? Did you run off with a senator's wife? I like to think you killed a man. It's the romantic in me.

Rick Blaine: A combination of all three.

Renault: And what in heavens's name brought you to Casablanca?

Rick: My health. I came to Casablanca for the waters.

Renault: The waters? What waters? We're in the desert.

Rick: I was misinformed.
