We love to cook salmon in the cast iron skillet. 3 minutes skin side down, flip, then 6 min (more or less depending on how thick the steaks are) on the other side. The skin peels off easily. The cast iron makes a beautiful sear on the fish.

The biggest discovery we made was that we can cook in the cast iron on the grill outside. This keeps all of the oil splatter out of the kitchen. We do fish, veggies, etc. all outside in the cast iron any time we can.

This has inspired me to try salmon grilling in 6" iron pans. Presentation and all that!

I like to cook my salmon on a Himalayan salt block on the BGE. And we always eat the skin.

Yesterday I got a bill from my hosting company, they charged me for a year of old php support.
I anticipated a long, contentious argument about it, including the tricky way you have to deny wanting it. It's not something I signed up for.
So I got all my ducks in a row and phoned, telling the person I was surprised by this charge.
He immediately offered to correct the bill and remove it.
I was very happy.

We (DW, and I), were in the 3rd row at a Beach Boys concert back in the early 90s (all the original members), and still remember it as one of my favorites of all time.

Today - 05MAR2020
The penultimate minute at Osteria la Vecchia Lira in Milano.
We had a great lunch. Prosecco and a Lagrein with carpaccio, house spaghetti, dolce, coffee, grappa. Excellent service.
We were so happy.
Then, our waiter says: “our credit card phone line is broke, cash only”.
I have to remember the penultimate minute.

Going to Walmart to get 5 prescriptions, fearing the one that goodRx says will only cost $665 with the discount.

Total was: $58 (insurance was better than I expected)

The sun came out (finally!) for the afternoon dog walk. What a relief, after dodging rain the last few days (and all of Jan/Feb for that matter). Another beautiful sunset.

Having dinner at a Mexican restaurant with my neighbors a few days before we move 1000 miles away. Our kids grew up together, we were best friends for over 25 years and they helped us through the hardest time any parent can go though. We ate, drank and had a fantastic time.

We're the first couple from this generation of neighborhood families to retire and move. Our kids are all in thier late 20's early 30's. For years we all had Friday night cocktails and pizza while the kids played on the street and front yards.
Now our son has bought our home and moving back in with his own family. In a few years he'll be the old man on the block.

Woke up to a cold, foggy morning. So glad I don't have to head to work on this Monday after DST began.
No matter what is going on in the world, so far retirement had been a dream for me.
Loving life!

I got a letter notifying me of an abandoned HSA with $400 in it. I don't understand it because I closed the account and transferred it to a new provider, but anyway, $400 of "free" money comin' my way.

Played golf today. What a pretty day. You would never know there is a virus problem with all the golfers playing. Should have been pretty safe tho as I had my own cart and so did my playing partner.

Heading off to Rally (a type of obedience competition) practice with one of my dogs confident we will keep our distance (best practice at dog venues is “social distancing” of one’s canine sidekick with other dogs).

So - happiest moment today? I can still go outside and have fun with my dog.

Even if I’m not sure my TP supply will last Whatever Is Next.
