For DW and I, brisket, Texas style. Salt and Pepper rub on a 7 lb (after trimming) packer. On the BGE at 7am.. currently in 'the stall' at 167° ... will wrap in butcher paper once she starts climbing again.. at 203° she will meet Mr. Potato Salad and his friend Ms. Baked Beans. Monsieur Red Vino will also attend the party.
She was in her Prime and only 10.5 lbs at the store and she came home with me for about 3 bucks a pound.

Pretty good investment? :dance:

That's a fast rise to stall temp. What did you set the Egg at?

I thought so too, but temps maintained for about an hour now. Set the egg at 250° . but backed down to 225° when I saw the temp come up.

Not saying you did anything wrong, but in that situation I'd be tempted to move the probe to a different spot to be sure of the reading.

Moved it slightly, still in the flat. It did make a 10° difference... 158°, which is more indicative of the stall temp expected. I would have double checked it with a Thermapen prior to wrapping so I wasn't too concerned, but good tip Brau.
