Small(ish) Europe Group Tours?

Well, the nature of custom travel is that it is, well, custom. I believe he has a base daily rate for himself and his SUV, but everything else will vary. Itinerary, types of hotels, attractions, special items (like cooking school sessions), meals, ... all drive the pricing. In our case, he drove 1000+ km from Bulgaria to Bratislava to pick us up, we booked and paid for some of the hotels, and we paid for all meals. So the number really wouldn't mean anything to anyone else.

I will say this: We travel internationally a couple of times a year and my rough rule of thumb for looking at custom tours is $800/2 people/per day. Much over that starts to look expensive to me (like Antarctica cruises :() and I am happy when I find a good operator and itinerary that is cheaper. I am sure that Patrick was cheaper.

Patrick is quite responsive to emails and I am sure he will be happy to give you ballpark numbers once he knows the what/where/when of your trip. When he's with clients he typically answers emails in the evening. That part of Europe is GMT+3.
