Chili

I’ve heard they put cinnamon in their chili in Cincinnati. That just seems wrong on every level.
I've also heard of adding a bit of cocoa. I think both can make sense in small quantities, just enough to add an elusive something extra that you can't define.
 
Funny you say that, as I'd heard that and last time I made chili I added some chocolate. Didn't notice that it made any real difference in the flavor.
 
It is getting to be Chili Season for the next 5 months. I like to make a big pot of it that lasts for a few days. Like spaghetti sauce it gets better by the next day. I mainly use cubes of beef or pork and some pinto beans with jalapeno/chipotle and a bit of chocolate to smooth it out. I tested out the chocolate years ago by saving a bit before adding it. You can't taste it but it seems to mellow it some without affecting the heat.
 
Totally off-topic thread-drift, but I gotta wonder about the "Similar Threads" algorithm. How are these related to "Chili"? :)

We are huge chili fans. We eat it a lot.

We usually mix ground beef and ground chicken or turkey (well drained) and pinto beans (even though anyone who knows beans about chili knows chili has no beans as they say).

But the topper is some cornbread made in small skillets, Southern style. Jalapenos? All the better.

And if you have some SEC football, this is perfect companion, I'm told.
 
The last time we cooked and had chili was 8 or 9 years ago. My husband likes chili but I don't, although I eat it. Since I am the cook at home, it explains why we don't have them. :) Seriously, he has not asked me to cook chili, if he had I would have cooked it. Shhhh...
 
Growing up in Texas, I think Texas has the best chili.

Growing up near Fort Worth, my mom always used Ranch Style beans in the chili. When I got older, I could never make chili as good as my mom. I then learned her secret. She had a jar of cumin seeds hidden away that she only pulled out for chili. She was a sneaky lady.

I just had my first Chugwater Chili last week. After driving by Chugwater, Wy, for decades, I finally stopped and had a chili cheese burger. The chili was quite good.

We were in Independence, Mo, and had lunch. We ordered chili dogs. We couldn't choke down the chili dogs to save our lives. The chili was so bad. Later I figured out it was Cincinnati chili. That stuff should not be called chili.
 
Well fits into my diet perfectly. Not unhealthy. That's one of the reasons I like it.
I was mostly kidding. There are some foods I eat more because they're healthy (some I like more than others) some I eat once in awhile despite being unhealthy, and some in between. I want beans in my chili, but not a lot, which is less healthy, but since I rarely eat chili, I don't care.

Actually, chili can be pretty darn healthy if one uses lean meat. Meat is very nutritious. So are beans, tomatoes, and chili peppers. Beans have carbs, but they have a pretty low GI.

"Meat" is too broad of a term to be meaningful. Beef eaten frequently has been shown time and again not to be healthy, but to each their own...
 
Beef w/cinnamon? Cloves? Allspice? Pasta?

To each their own, but sorry, I'm knockin it. :) (PS I quickly add I'm sure there are things I like that you'd balk at as well; all good, we all have our prefs)

I’ve driven through Chugwater, Wy many times. My DH always wants to stop for the chili but so far we haven’t had time. We’ll have to make time next trip.
 
I don't understand the "wars" over chili, BBQ, pizza, hot dogs, etc. Different styles, I can enjoy pretty much all of them. There are a few abominations, like that old saying, being open minded doesn't mean having a hole in your head!

My wife makes a chicken chili, a pork chili, a beef chili. They are all good - why not?

That said, I do think terminology is important, so we communicate effectively. Like I've said in other threads, the "Chicago Style" hot dog is a specific list of ingredients - you can have your dog any way you want, but deviate from that a,d it is not "Chicago Style".

Same applies to various chili recipes, BBQ etc - the description should convey the style. If you don't like that style, don't eat it! But why deny its existence?

edit add - I've added pasta to chili. I like it, variety is good.

Just a Hawaii perspective... chili must be eaten over rice!
