Question for Sourdough Bread Makers

I like to leave the bread on the island sitting on a cutting board with the butter bell next to it so people are invited (tempted) to lop off a slice anytime they want. "eat this, it will make you feel better."

You must be hugely popular with friends and family. I feel better just thinking about home made bread with good butter.

One question, do you use salted or unsalted butter for you tempting bread and butter?

Salted, always.

I'm picking up daughter in just about an hour, and she'll arrive home to this. I know she's looking forward to it.

Wow!! I tried it again today and I just looked, and it has double plus in the rise. It looks like it is alive and well a lot of huge bubbles. I just got done putting it in the basket and in the fridge till bake time in the AM. I always place in freezer for about half an hour and it makes it so easy to remove to the baking bowl. The picture below shows the beautiful rise of the dough.

I'm very happy to see the startah is alive and well. I took the advice from zaqxsw and it worked great. I just add a few more days on the countertop, but it did the trick. Thank You!!

Turned out great!!! I'm so surprised after a failed attempt after starter was asleep all summer and didn't respond to a wake up.

That blue bowl is the bowl that is sat in to raise for the day. That is just the mixing bowl prep. I take it out of that bowl and place in basket bowl in picture then in fridge for overnight.
I then use a 6-inch high 10 wide glass bowl for baking the bread.

Another bake this AM. Here I thought my startah was not going to come alive,

but it has more vigor than last year.
 
Looks like you had a big project going on in your kitchen?
I cooked for 8 on the Monday before, 24 on Christmas Eve and 14 on Christmas Day.

Monday was eggplant parm, chicken cutlets (parmed at the last minute) and rigatoni vodka sauce and fresh bread.

On the Eve we enjoyed a huge spread of appy's including cold fish salad (frutti da mare), eggplant caponata, roasted red peppers, assorted meats and cheese, more fresh bread (ciabatta). My sister made rice balls and my aunt stuffed mushrooms. Manicotti for the pasta course and the main was chicken franchaise, risotto and braised carrots. Then we had 27 variety of cookies to sample and artery clogging cheese cake for dessert. I cooked everything except the dessert. my wife handles that.

Christmas day was a pork loin stuffed with spinach and provolone, broccolini, fried eggplant and roasted potatoes.
