What We’re Smoking (or Grilling, or Curing)!

This is second roast out of SV, then out of smoker, then final product in crock pot to be served. I'm calling it a total success.

Do you think it took on as much smoke this way?
 
I think the smoke was just about right from tasting a few pieces here and there. I will be able to judge better later this evening when we tear into it. DD and SIL have a big shindig for Independence Day, and I had it for the crew that is setting up the canopies, tables and chairs.
 
My DS is stopping by for a couple hours this evening, so I will be grilling some ribeyes. It is the sure way to get him to have dinner with us.

He is driving up from college. Some of his friends are leaving this evening to drive through the night to get to Chicago tomorrow to visit a friend who is there for the summer. They will spend the weekend and then drive back. I am so happy that he is taking on this adventure. 1k miles each way.

I love a good ribeye, also a prime rib. Trouble is I can't pay $19.99 a lb. anymore. And I grew up raising cattle. Its' just priced me out of the market.

Why not just have one of your own Angus processed into fine cuts of beef?
Maybe sell the hamburger and take home the good stuff?

An angus steer on the hoof is worth about $2.50 a pound. Do you know what an angus steer weighs ? I do. I raised them for years.

It also costs a pile to butcher a steer. I'll let you guess.

You'll be looking at about 4 grand. Trouble is, it costs that much to raise one.

I'll buy what I want instead. I'll watch my farmer friends sell their steers and let you all pay too much for the prime cuts.....

Raise your own beef when you buy a farm. If it was simple....everybody would be doing it.

On a side note to imjustawarrior, that is a great price for ribeye. I'd try one then stock up.

We recently purchased a quarter Angus beef, $800 for 200#, plus $175 to butcher, vacuum seal and wrap. So $5/pound. Same price we paid last August, same farmer.

We’re retired and not raising kids, so it’s just the two of us. For us the occasional good quality ribeye and the very occasional ribeye roast is a high priority.
 
Sautéed mushrooms, sautéed spinach, asparagus, various potatoes - easy to do at home.
 
Sunday night at a favorite spot with friends, I had grilled salmon and asparagus. I like it better than steak (but that's me).
 
I apologize for my snide remarks above. Winemaker is right, a quarter of beef processed in your freezer is about $1,000. $4,000 per steer.

DW and I buy what we want, when we need it. Beef is seldom, if ever bought. Its been years since I bought a ribeye, but I do get a prime rib roast for special occasions with family. Its going to be cheaper than taking the family to Applebees for mediocre burgers.

If you can pair a prime rib with garden potatos and asparagus......you can't beat it.

Perusing the forum on a lazy Sunday afternoon while listening to Sirius XM, Little Steven's Underground Garage. I usually do this a couple of times a week, and while in the grilling thread, a new song to me came on. Never heard of the group or the tune, but thought it was funny that it came on while reading this thread. "Too Much Barbecue", by Big Twist & The Mellow Fellows. Enjoyed the song, and then looked up a video, too. Maybe somebody else will enjoy it!

 
I remember occasionally hearing this song on the old Dr. Demento show. But it's been a couple of decades.
 
I just yesterday made up the brine and started corning a beef brisket.
 
One of these days! I’ve got several smoker projects on my bucket list.
 
Smoked salmon is on my bucket list. I love smoked salmon. When I would go to Scotland for work, I would eat it every day. So good.
