What We’re Smoking (or Grilling, or Curing)!

Burgers on the charcoal grill tonight. Melted fresh slices of Colby-Jack cheese on my burgers. DW's was just a hamburger. Just had them with kettle-cooked barbeque potato chips.
 
You meat cookers can start shopping at walmart.

 
Costco will remain my go-to for USDA prime steaks, not that I cook much anymore these days.
 
I read that article to my wife, she says she will never buy meat from Walmart due past issues. I trust her judgment.
 
still deciding on a smoker. Looks like it's between a basic Traeger Woodridge and a Recteq Deck Boss 900. Both are under $1K (slightly). Any thoughts on a Recteq vs Traeger? Both are newer models.

Dh loves his treager. We bought it at Costco years ago, it was the smallest, least expensive one they had. Just right for a small household!

They flood their packaging with carbon dioxide or carbon monoxide I forget which that makes it look nice and red even if it's spoiled. That's old information so it may not be the case anymore but I also found that Walmart meat prices weren't any better than my premium supermarkets meet prices/.
As for odd curing and smoking, I cured and smoked some ribs little baby backs that really came out nice bacon with the handle. I also make gravlax quite a bit for you salmon lovers. Just a 50/50 blend of brown sugar and salt rubbed all over a salmon fillet with the skin still attached. After about 3 days take it out of the ziplock bag and rinse it off had it dry and enjoy it with some cream cheese. You can also add Dill if you like it. Making your own corned beef is also a lot of fun and you get to pick the cut of meat you're going to use you need some pickling spice some salt and just rub a brisket down with that and leave it sitting in the fridge for a couple of weeks. You can use a wet brine or a dry brine the dry brine tends to go a lot faster and have a little bit more assertive Corning taste.
 
I just finished prepping a rack of baby back ribs: garlic powder first, then jerk seasoning paste diluted a bit with olive oil to make it more spreadable.
I'll toss this on my gas grill before long (not my smoker grill this time) on low heat for an hour or so.
Will try to do an after pic as well...

Took me a minute to find it but here's bacon ribs cured in the refrigerator for 3 days and then smoke for 5 hours

If I buy a new smoker this year (and there's a good chance I will), it will be a Recteq Bullseye Deluxe (RT-B380X). Since I'm cooking for just myself (and an occasional neighbor), it's the perfect size for me and has every feature I want.

The last one I bought was just an electric with the thermostat attached some of them just get too fancy with Bluetooth to your phone and all that crap and I found doing it with wood or charcoal it's just too much effort just a 3 ft tall box works like a charm
 
We got a Traeger and after about 4 months, we finally got it to work. Initially, after we put it together, the unit did not hold the temp, and after alot of troubleshooting with their support, they sent us a new circuit board. It was ridiculously difficult to change it out but we managed to do so after several days of struggling with it. Once the circuit board was changed, it worked well. We haven't smoked in 2 years because we don't eat much red meat anymore.

I just ordered the Recteq Deck Boss 900. Caught it for $100 off.
 
I finally broke down and got the RecTeq smoker I mentioned. Gave it a test run today, just a single slab of ribs to try it out.
Very happy to report that I got noticeably more smoke flavor than I normally get with the BGE, so it was definitely a good idea.
Another great toy to play with!

Great to hear! My DB 900 has not been shipped yet (ordered 6/20).
 
With more than twice the cooking area of my little Bullseye, I think you should be able to handle a decent size gathering. Hope you like it as much as I do mine!

FWIW, I found the assembly to be pretty simple, no problem at all. The only issue was that the crate had been severely damaged in transit. Even the FedEx guy who delivered it commented on how bad it was.
Fortunately, the packing inside was robust enough that the unit itself just suffered a few small dents, and I can live with that.
 
Man, it’s 2026 and today marks our 45th anniversary! We are celebrating with good friends, so the final picture doesn’t do the steak justice. I was trying to sneak it in without anyone noticing. But I also captured the entire process.

We enjoy our own steaks more than the most expensive steakhouses, so prime filets ($52/lb!!!!) were on tonight’s menu. My beautiful bride made the wonderful spinach and strawberry salad, as well as the sweet potatoes.

Seasoning after 24 hour dry brine

Slow smoked at 225° until internal temp hit 130°

Yes, I also enjoy doing the fancy steakhouse style dinner at home.

Glad to hear you like it. Mine has not shipped yet due to the Father's Day sales and order filling.
