I learned that those neat collapsible cooling racks you can use for all your baking needs are flawed. Spent the day backing a apple pie. The results looked great when I took it out of the oven. Wow! and the aroma's, heavenly! Placed directly from the oven onto cooling rack on counter top. Cooling rack promptly collapses (well, I guess that's what it was made to do, but the timing was definitely wrong). Pie cascades off the counter onto the tile floor. It , of course, landed upside down and slid about eight feet across the kitchen leaving a trail of apple filling, and crust on everything in it's path. Lesson learned - I learned never to place the rack so that when it collapses (and it will) it can launch the food item off the counter. This happened Sunday and I am still cleaning sticky off everything.
