Favorite winter comfort foods

We don’t usually have a pot roast until the weather gets cold. Great one pot meal.
 
I simply roast a bunch of my favorite vegetables and then top it with goat cheese. Some of the ones I use are Brussels sprouts, celery root, red beet, cauliflower, sweet onions, carrots, broccoli, and Delicata squash.
 
I love any type of beef braised in wine a long time, like boeuf bourguignon, boeuf en daube, Italian brasato, etc. often with mash or gnocci.

I also love "moitie-moitie" cheese fondue (gruyere and vacherin fribourgeois) over having raclette.

But I also enjoy a good turkey soup with a good sourdough bread. And mac and cheese (my recipe adds pecorino to amp up the cheesiness, along with cheddar and gruyere).
 
Beef stroganoff-family recipe. Pumpkin or squash soup-usually peanut curry. I made and froze a lot of zucchini celery soup in August. I’ll start pulling it out next week.
