Cheese!!!

I recently remembered and resurrected a way of making grilled cheese sandwiches. Use a nonstick waffle maker to do the grilling and the bread has all those squares of extra crunchiness, and it cooks hot enough to get a little softening on tomato slices if you like tomato on your grilled cheese. The nonstick means any spill over cheese is fried and comes off in one piece as an added delicious bonus.

Not cheese related, but I use the waffle iron to make "Waffled Falafels". No deep frying, and it's fun to say!

That’s how my mom always made grilled cheese sandwiches when I was a kid.
Therefore, not making it in the waffle iron is just weird to me.
It has to be a real waffle iron though not one of those Belgian waffle makers. [emoji23]
 
This is the best thread ever! It has fostered a lot of conversation between my husband and me who, like a prior poster, have never met a cheese we didn't like. So many possibilities! Yum.
 
I like it much better. It isn’t as dry. Manchego tastes too waxy to me.
 
Well, if I ever make it to Austin I’ll stock up.

I picked it up at the ABQ Costco and had noticed it at the Superior CO Costco. But unfortunately my local Costco doesn’t carry it, and the online prices I see are way higher that what I paid like over 2x. We don’t have Central Market or Whole Foods down here.

Now Specs, huh, we have one of those. I hadn’t looked at their cheeses - the liquor store?

Yep, that's right, the liquor store. Who knew? To be fair, they don't always have it but when they do, it's significantly cheaper than either Central Market or Whole Foods.

Thanks! I checked the Spec’s store here and unfortunately not in their online ordering inventory which is generally very extensive. But they took over local chain Feldman’s which had one gourmet store with a fancy cheese shop, so I’ll keep checking.

Got this Ossau Iraty from Costco. It's sort of stinky but I like the taste. The outer layer of the wedge has a drier texture and has a light brown color. It looks like it's part of the cheese and is probably okay to eat. Is it?

Ossau-Iraty has a very distinct strong smell. The rind is natural with a chewy texture. You don't have to eat it (if you don't want to), but we do really enjoy this cheese with the rind.

I picked up some Brie Le Cremeux at Costco for about $11 a pound.
It's quite good, IMO.

Picked some Gouda at the Grocery Outlet today. Found some Gruyere not long ago. They have a good if small cheese section. wine and Crafty beer too. :D
 
Darn it! I wish our Costco had that!

If we ever had a pot-luck party with members of this groups from all over the nations, I imagine the variety of wines and cheeses from the various local Costco stores would be mind-boggling. They vary so much depending upon the location and clientele.
 
Not sure how I missed a cheese thread.... but oh my, yum!

I've rarely met a cheese I didn't like but am partial to aged goudas, sheeps milk cheeses and Cougar Gold cheddar. This last is made a the Washington state University's ag school creamery and packed in ~2 lb cans. Fabulous. This cheese ships and so is our go to holiday gift for long distance gifts.

Not to brag (lies!!!-definitely bragging): I have a tin of Cougar Gold that I have been aging for 20 years.

Both my kids have been asking their entire lives about what special occasion will get me to open it. I just smile.
