Beet leaves are excellent, too. And to think I used to throw them out!!!
I should add here that potato vines are poisonous. Sweet potato vines are different. Supposedly, the latter is very popular and eaten throughout Africa.

... grown indoors and under fluorescent lights?
 
Simple canned or frozen vegetables I think of as from scratch. If I had grown them, I would have canned or frozen them myself for later usage. Tomatoes is one where the canned are usually better quality than fresh if you are going to cook with them. I do look for canned/frozen veggies that are simply the vegetable, salt and water. But that's because I am avoiding certain spices.
 
Someone messaged and asked about the pizza crust recipe. Its no big deal. I make normal bread dough (water, yeast, dash of salt, dash of sugar). I add some olive oil and maybe some herbs depending on what I have on hand and what I'm topping the pizza with. Roll it out after the second rise and thin it out by draping over two fists and walking them around the circumference. I don't cook the crust before adding toppings.
