Stick with current T-Mobile phone, or buy Euro SIM card on arrival in Portugal?

I find it very worthwhile to have a local number for both me and DW. That way, if we get separated, or go our own way for an afternoon, we can easily get in touch with each other or find each other on "find my friends". This does make 2FA impossible as I use physical local prepaid SIM cards. I did not know about the eSIM and will look into that for our next trip.
iMessage works fine for us and is free. I expect find my friends also works.

If it comes down to it FaceTime audio calls.

Very interested in this thread. We leave for London for 2 weeks end of May. We both have iPhone12s, so they support eSIMs. We use Xfinity cellular though, so I don’t know what their deal is for eSIMs. Or are eSIMs carrier independent?

We normally use Whatsapp but I don’t know how good the wifi coverage in London is.

Yes. Both work fine as long as you are on wifi or have a local data plan. When buying a local data plan we also get local numbers.
