We bought a watermelon Saturday morning at the farmer's market. We cut it open Saturday afternoon, wrapped one half with saranwrap and stored it in the fridge. Cut up the other 1/2 and just now finished this portion.
So we still have 1/2 of a watermelon in the fridge. I can cut it up, and we can try to plow through it in a few more days, but I'm not sure if it will stay fresh that long.
So I've thought about freezing it. I looked on-line and there are various opinions on this. Most say yes you can freeze it (small chunks on a cookie sheet before putting into a freezer bag), but you have to eat it partially frozen with ice crystals in it or it will be mushy.
That doesn't sound so good to me. I'm curious if anyone here has tried freezing watermelon, and what your result was. I also saw some different recipes for watermelon sorbet and even watermelon margaritas...anyone have a tried and true recipe for frozen watermelon?
