You probably know about these, but I just ran across them. Pizza crispers are pans with a bunch of holes in the bottom, especially for pizzas in toaster ovens, but also for regular ovens (I haven't tried this) and other foods that need bottom crusts. They compete with pizza stones. The holes let more heat up from the bottom and let more moisture go downward, for crisper crusts. For "take and bake" fresh pizzas, which my wife and I mostly fix, they work better than a pizza stone, and don't require preheating.

The ones I have are from Amazon: Amazon.com: Nordic Ware Toaster Oven Pizza/Crisping Sheet: Kitchen & Dining for $7.25 (small, mine warps a little when hot), and Amazon.com: Breville 13-Inch Pizza Crisper: Kitchen & Dining for $19+.

Thanks for posting Greg. Those look very nice and helpful.
